Default Memory on a 4850

Thinking of getting a 4850. I 've seen different quantitities of memory available, I was wondering how much having more video memory will help. How it will help, and how much latest games use.

Do they use all available memory?

Does it make Framerates faster, or just get to save more tectures internally so when It loads new textures half of them are already in memory so its faster load times?
