I recently upgraded from 4 GB of Ram to 8 GB, but I'm not sure if my system is utilizing it.

I'm not certain if you'll require system spec or anything just yet, or may be able to help without.

After installing my 8GB of ram (2 4GB sticks), my System preferences (In Vista, right-clicking "My Computer") it shows my memory as 8.00 GB. However, if I open Task Manager, the Performance tab only shows me at 3325 MB worth of Physical Memory.

Shouldn't Task Manager be showing over 8000 MB of Physical Memory? I have a feeling my system is running video games more choppily because of this, as it's running 80-90% of the shown momory, where that 80-90% should be 35-45%, right?

That means that you are using the 32-bit version of Windows. You should install the 64-bit version, which has a higher memory limit.
