I want to upgrade the onboard video on my Asus P5VDC-MX board.

What should I go with PCI Express x1 or AGP 8X?

Are there any current video cards that are compatible?

Well, video cards typically use PCIE 4x, not 1x... 1x is like a replacement for traditional 32-bit PCI slots, e.g. for sound or network cards. PCIE has replaced AGP as the dominant standard, and all new video cards are made PCIE only. That said, if you want to use your existing motherboard and just upgrade the video, sounds like you're pretty much stuck with AGP.

At least there is a good selection of used cards on the market.
